Dipped Cookies
In the words of Cookie Monster, “Om Nom Nom Nom”!
If you have not noticed I love Sweet Loren’s and their products, especially their place & bake cookie doughs. Why? Well first off, all their products are Certified Gluten Free, Certified Vegan Certified, Nut Free, Dairy Free, Non GMO, 100% Whole Grain, and Kosher Pareve. Secondly, all their products are manufactured in a dedicated facility free of gluten, wheat, dairy, peanuts, and tree nuts. I MEAN COME ON – this is what dreams are made of for those who not only have celiac disease, but any person that lives by a specialty diet. Even with the cookie dough being made from whole foods and real ingredients, which some would find un-yummy, these are amazingly yummy! My fiancé loves when I create with Sweet Loren’s and so do my friends.
I created these fun dipped cookies to celebrate my favorite yoga teacher’s accomplishment of teaching her 1,000th yoga classes at CAMP Tampa! The sprinkles I have from Sweetapolita screamed her – fun, bright, positive, full of color, and awesome!
Also, I have been sharing recipes that take a little more time in the kitchen, so I wanted to share on that was quick and simple. This recipe is one that you can get together rather quickly (less than 30 minutes) and nobody would know! I promise these dipped cookies will be great for any type of event, snack, or whatever you want the reason to be to enjoy these. These cookies even with the chocolate and sprinkles are still gluten free (obviously) and vegan! However, the Nestle white chocolate chips that were in my fridge are not vegan, so make sure to find vegan white chocolate chips or chocolate to use if you want to dip your cookies in white chocolate.
A note on Nestle chocolates - Nestle Semi-Sweet Chocolate Chips (Morsels) are gluten-free. In fact, all Nestle chip varieties are gluten-free with the one exception being butterscotch chips. Supposedly, Nestlé Toll House has released vegan white chocolate chips as the newest product in its dairy-free baking products range. Made using tapioca starch, the white morsels will add to the Simply Delicious Morsels range.
Cookware and Utensils, You Will Need:
A cookie sheet
A wire cooling rack
2 small glass bowls (make sure they are wide enough to be able to dip a cookie)
Ingredients for Cookies:
Package of Sweet Loren’s Sugar Cookie Dough
Ingredients for Chocolate Dip:
½ C of white chocolate chips (I used Nestle as I had them in my fridge).
Directions:
Preheat the oven to 325 degrees Fahrenheit.
Line the baking sheet with parchment paper.
Place the sugar cookie dough on the cooking sheet and bake for 15 minutes. With Sweet Loren’s they tell you a range for the soft & chewy cookie then the crispier cookie. You want the crispier cookie for this!
Once cookies are done, let them cool on the baking sheet for 10 minutes then move to the wire cooling rack.
While cookies are still cooling, melt the chocolate chips. You will microwave each type of chocolate for 20 seconds then stir and microwave for another 20 seconds then stir once again. You may need to microwave for another 10-15 seconds after the second stir depending on the power of your microwave.
When the cookies are cool to touch and not breaking when you pick them up then it is time to dip them into the melted chocolate you have. Pick the side you want dipped or dunked and dip twice into the chocolate. I even used a small spoon to smooth out the chocolate then placed on the wire rack to set.
If you want to add sprinkles like I did, make sure to add the sprinkles as soon as you dip the cookies so the sprinkles can set with the chocolate.
