That’s So Fruit Pizza
I love a good festive dish for any holiday and with the Fourth of July coming up I wanted to create something for everyone to enjoy from kids to adults! And who doesn’t love a fresh fruit pizza?
That’s So Vegan and GF Fruit Pizza 🍓🍕
Ingredients:
* 2 packages of @sweetlorens Sugar Cookie Dough
* 2 containers of @miyokoscreamery Vegan Cream Cheese, Plainly Classic (8 oz)
* 3/4 C Water
* 1 C Orange Juice
* 1 2/3 C Sugar
* 2 TSP Vanilla Extract
* 3 TBSP Corn Starch
* A dash of salt
* Strawberries (sliced)
* Blueberries
* Raspberries
Recipe:
1. Preheat oven to 325 F. Combine the precut cookie dough pieces into a ball so you can roll it out [I let the packages sit out an hour before, so they’re more workable]
2. Roll out the dough into a even pizza like shape and transfer to a lightly greased pizza pan.
3. Bake cookie pizza for 16 minutes and let it cool!
4. While the cookie pizza is cooking, you’ll be making the icing and the glaze.
5. For the glaze, combine the orange juice, corn starch, water, dash of salt, and 1 C of sugar in a pot. Bring it to a boil and let it boil for a minute. Whisk the glaze throughout this process. Put the pot in the fridge to chill for 15-20 minutes.
6. For the icing, combine the cream cheese, vanilla, and 2/3 C sugar! Mix together until smooth and somewhat fluffy!
7. Once the cookie is cooled, add the icing, decorate the cookie pizza with the fruit, top with the glaze, slice then enjoy**!
This can be stored in the fridge for 2-3 days! But I doubt you’ll have leftovers 😉🤤
A little secret sauce from my fiancé is adding a little bit of cinnamon to your slice!
