That’s so chickpea burger + sides

This recipe was created during a morning conversation with a friend about how I wanted to showcase that detox meals do not have to be boring and flavorless, but can actually be fun and full of flavor!


I read a few different ways to make a chickpea burger and came up with my own version of what I read up on! This is 100% GF and Vegan yumminess 🤤

Ingredients:

  • 1 can of chickpeas / garbanzo beans (drained)

  • 1/2 TSP garlic powder

  • 1/2 TSP onion powder

  • 1 TSP black pepper

  • 1 TSP sea salt

  • 1 TSP thyme

  • 1-2 TSP cayenne pepper (depending on how spicy you want it)

  • Half of a lemon squeezed for lemon juice

  • 1-2 TSP of @thenewprimal sriracha tahini (again, depends on how spicy you want it)

  • 1/4 C flaxseed meal (I use @bobsredmill )

  • 2-3 large parsnips

    2-3 large rainbow carrots

Recipe:

  1. Put all ingredients besides the tahini and flaxseed in a food processor and pulse until combined.

  2. Transfer the burger mixture into a mixing bowl and add the flaxseed meal (you can attempt chickpea flour or almond flour as well) and mix well!

  3. Add the 1-2 TSP of sriracha tahini to the bowl and fold it into the mixture.

  4. Put the burger mixture in the fridge for 30 mins as this will allow to easily form it into patties to cook on the stove stop!

  5. While the burger mixture is chilling to form, peel your parsnips and rainbow carrots, so that the “skin” of the vegetables are removed. Then utilize the peeler to thinly ribbon pieces of each vegetable.

  6. Once you have the amount of ribbons, sauté the veggie ribbons in a skillet on medium heat. You can sauté them in water then add EVOO and black pepper once they are cooked. You only need to cooked them for 5-8 minutes to get them to a soft texture.

  7. Once the mixture is formed into patties, heat up a skillet on medium heat and put a little bit of water on the skillet then add patty to skillet - cook for 5 mins on each side.

    *You can do steps 6 and 7 together, so the chickpea burger and sides are done around the same time*

  8. Add sides and enjoy!

Notes: This mixture makes 2-3 “burgers”. I put the other uncooked two patties in an air tight glass container and placed it in the fridge! I’ll make sure to use them over the next 3-5 days (see my leftover dinner below).
