That’s So Fluffy Pumpkin Cookies
If you can’t tell by the recent recipes I have been releasing, I have been in a Fall state of mind when it comes to getting creative in the kitchen. When I created this recipe, I was thinking of the frosted sugar cookies [see picture below] that you can get from your local grocery store, which I used to beg my parents to purchase for me!
As you may know, making gluten free and vegan baked goods “fluffy” can be quite a task, but I think I have somewhat figure it out with this recipe. My husband even enjoyed them, which is always a great compliment since he does not typically eat gluten free and/or vegan. These cookies are perfect for your own snacking and/or dessert of choice or the perfect cookie to share with others.
Ingredients:
2.5 C All Purpose Gluten Free Flour
1 TSP baking powder
1 TSP baking soda
1 TBSP Pumpkin Pie Spice
½ TSP salt
½ Cup Vegan Butter [softened]
1 C Vegan White Sugar
½ C Coconut Sugar
1 C Pumpkin Puree [canned]
1 Flaxseed Egg [1 TBSP ground flaxseed & 3 TBSP water, let sit in the fridge or freezer to form together in an egg like substance – takes anywhere from 5-15 minutes]
1.5 TSP Vanilla
Miss Jones Organic Frosting, Vanilla
Equipment:
· Mixing Bowl[s]
· Kitchen Aid Mixer or electric hand mixer
· Tablespoons
· Teaspoons
· Measuring Cup
· Rubber Spatula
· Cookie Sheet
· Parchment Paper
Instructions:
In a bowl, combine the flour, baking powder, baking soda, pumpkin pie spice and salt.
In your kitchen aid or with a handheld mixer, blend together the butter, white sugar and coconut sugar until fluffy.
Add the pumpkin puree, egg, and vanilla to the kitchen aid fluffiness.
Add dry ingredients to wet ingredients and mix until combined.
Scoop your dough onto a cookie sheet. Make sure to flatten the scoops a little, so they are somewhat flat on the top.
Bake at 350 degrees for 10-12 minutes [do not overcook these unless you want a dry cookie].
Let the cookies cool for 5-10 minutes and move it to a wire rack.
Once the cookies are completely cool, frost them with the Miss Jones Organic Frosting, Vanilla. You can given top with a sprinkle of pumpkin spice!
Try not to eat all of them!
