That’s So LillyBean Pizza

Pizza has always been one of my favorite food items to eat, especially when I do not want to cook. However, not cooking means I either do a frozen pizza and/or order pizza from a pizza joint that may not be celiac safe but does their best to limit cross-contact. Throughout the last 3 years, I have not found a gluten free and vegan pizza crust that really tickles my fancy and/or reminds me of the pre-celiac pizzas I used to enjoy. However, LillyBean came in and saved the day with their new gluten free & vegan pizza crust mix.

How did the pizza crust save the day? Well, it did not taste like cardboard and it was the right amount of texture – not too dense with some fluff in all the right places. We knew the crust was going to smell good while cooked as the mix smelt amazing coming out of the packaging. Plus, my husband, who does not have to eat gluten free or vegan, really enjoyed it. He has tried a lot of frozen gluten free and dairy free pizzas with me, which we have not thoroughly enjoyed as they have been thin in texture, fall apart in your hands, and do not have much taste. We have tried a few other pre-made pizza crust doughs, which have been extremely difficult to work with, did not taste the best, and not the most enjoyable texture. That is how LillyBean’s pizza crust mix saved the day.

LillyBean’s gluten free and vegan pizza crust mix is easy to make – as you only need the mix, water and oil of choice! I highly recommend a KitchenAid to make the pizza crust dough as it does the work for you when it comes to the mixing aspect of this recipe, which I think is the hardest part. The spreading of the dough on the pizza pan was actually pretty easy and fun! The dough is very easy to work with. We used a rubber spatula to move and spread the dough. We followed the directions on the back of the mix packaging to create the crust, which meant baking the crust for the suggested amount then flipping it over to create the rest of the pizza.

My husband and I have very different taste in how we like to enjoy pizza if you can’t tell by the pictures within this recipe! One pizza was able to feed us both without making us feel too full and allow us to share by splitting the pizza down the middle. The crust definitely makes it possible to add whatever your heart or stomach desires on top of it.

To make my husband’s side of the pizza:

  • Tomato Sauce

  • Mozzarella Cheese

  • Pepperoni

To make my side of the pizza:

  • Tomato Sauce

  • Spinach

  • Onion

  • Green Pepper

  • Minced Garlic

  • Red Pepper Chili Flakes
