TSC’S Turkey Meatballs
One of my friends mentioned she was making meatballs for dinner the other day and it made me want to make meatballs for dinner.
A random fun fact about me, I haven’t had meatballs since being diagnosed with celiac disease back in February of 2018. Meatballs were one of my favorite things as you can utilize them in many different dishes. However, my favorite meatballs were the ones my Grandma makes. However, they are filled with all the things I can’t have anymore [#thatssoceliac]. I’m not sure why I have not had meatballs since then besides not being able to have most ingredients in them as they are typically made with flour or breadcrumbs, but maybe I thought I’d never be able to make ones that were as good as my Grandma’s.
Let’s just say I outdid myself when I made this Turkey Meatball recipe. These are pretty damn good! These are of course gluten free and dairy free. This recipe is definitely a batch recipe, so you can get creative with how to utilize them throughout your week! I utilized one of Fody’s Pasta Sauces and one of Jovial’s pasta.
Ingredients:
1 pound of turkey meat
1/2 C of orange & red peppers
1 C of yellow onion
1 TSP garlic powder
1 TSP red pepper chili flakes
1/2 TSP salt
1/3 almond flour
1 TBSP of EVOO
Directions:
Preheat oven to 400
Wash the vegetables; de-seed the peppers
Dice the peppers and onions*. I cut chunks of each then put it into a ninja express chopper to get it really small.
In a large bowl, mix the diced veggies, turkey, garlic powder, red pepper chili flakes**, salt and almond flour! Everything simply needs to be combined.
You can add gluten free bread crumbs into the mixture as well ***
In a big casserole dish, put the 1 TBSP of EVOO and coat the bottom of the dish. I pour the oil in and use my hand to spread it around.
Use a tool or your hands to create balls of the turkey meat mixture and put into the casserole dish. I roll the ball over once in the EVOO that is the pan.
Cook for 20 minutes. Half way through flip the meatballs.
Notes:
You can take out the whole onion and sub 1 TSP of onion powder. *
You can take out the red pepper chili flakes if you don’t like a little kick. **
You can add 1/4 C of gluten free bread crumbs to this as well. ***
My husband liked both versions but the one with breadcrumbs is his favorite
